Sweat it out!
What a great final weekend of summer! It was filled with friends, social engagements, relaxation and a lot of errands to prepare for the week ahead. Saturday was a rest day for me. It was nice to "sleep in" - really anything after 7 a.m. is late these days.
I had a great workout yesterday - a lot of rowing and two HIIT sessions to complete the hot and sweaty hour. I rocked the Hyper Wear weighted vest for the duration of the workout. When I took it off, my shirt was a few shades darker than when I started! I can't wait to get one of these shirts.

Salad Shaker preparation
In the evening, I returned to the training center for the Plant FIT potluck. It is a monthly gathering for members, friends and community to share healthy, plant-based food and to mix and mingle.
I made a Southwestern Salad Shaker - thank you Whole Foods for the inspiration! I layered the ingredients (lemon juice, black and kidney beans, bell pepper, quinoa, cherry tomatoes, spinach) in mason jars. They were both healthy and beautiful! I tried some really delicious dishes at the event and met some great people - can't wait for the next one!
